Traditional dried-grape wines
Valpolicella Recioto wine
How is Recioto wine made?
Valpolicella Recioto wine is produced using an ancient method that involves the natural drying of grapes to concentrate sugars, aromas and extractive compounds. During vinification, fermentation is stopped before all the sugars are converted into alcohol: this step gives Recioto its balanced sweetness and velvety character.
The result is a rich, complex wine that authentically reflects the Valpolicella tradition. Each sip offers a unique journey through softness, intensity and aromatic depth.
Pairing Recioto wine
Recioto is a versatile and refined sweet wine, perfect with chocolate desserts, richly structured cakes – such as those made with cocoa or dried fruit – or traditional biscuits. Its aromatic complexity also pairs beautifully with blue cheeses or well-aged cheeses, creating balanced and enjoyable contrasts. It can be savoured on its own as a contemplative wine, ideal for concluding a special dinner or enjoying a moment of relaxation.

Traditional Recioto della Valpolicella wine
Recioto della Valpolicella
Alcohol content: 13,00% Vol
Bottle size: 750 ml
Description
Recioto della Valpolicella displays a deep ruby-red colour, animated by warm garnet highlights. On the nose, it captivates with sweet, enveloping aromas of ripe, jammy small fruits. The bouquet reveals notes of cherry, wild strawberry, blueberry, alongside subtle hints of red and dark flowers. The palate is velvety and well-balanced: sweet yet refreshingly crisp, savoury and structured with fine tannins. Luscious echoes of small fruits linger on the finish.
Following the ancient Valpolicella tradition, Recioto was reserved for special occasions, served alongside festive dishes.
The grapes are harvested by hand in the second week of September.
Winemaking
Selected grape bunches are dried on trays until February, losing around 50% of their weight. They are then crushed and destemmed, followed by 30 days of maceration on the skins with daily pump-overs. Slow fermentation occurs at temperatures between 15 °C and 20 °C, after which the wine is racked and transferred to stainless steel vats. Here, it undergoes frequent racking and completes its maturation, followed by six months of bottle ageing.
Perfect pairings
Thanks to its superb drinkability, our Recioto is a versatile gastronomic wine. It pairs beautifully with desserts such as biscuits, tarts, or a rich Sacher cake. For a creative twist, try it with savoury items like well-aged cheese or a mature soppressa: an unexpected match that truly delights.

Le Brugnine
Alcohol content: 13,00% Vol
Bottle size: 750 ml
Description
Le Brugnine matures for an extended period in small French oak barrels, which impart gentle hints of sweet spice, enhancing its richness and intensity. This wine was conceived as a little indulgence, perfect for ending a celebratory moment on a sweet note.
The grapes are harvested by hand in the second week of September.

A Mariasole
Alcohol content: 13,00% Vol
Bottle size: 750 ml
Description
A Mariasole, dedicated to Alessandro’s daughter (fourth generation of the Venturini family), embodies tradition, technical expertise and vision for the future. It presents a brilliant garnet-red colour with excellent body. The nose is complex and layered, with floral and fruity aromas intertwined with toasted and balsamic notes: violet, dog rose, propolis, honey, eucalyptus, mint and laurel, followed by clove and roasted coffee. On the palate, it is rich yet highly drinkable, with gentle sweetness balanced by lively acidity. Velvety tannins lead to a finish that recalls blood orange and echoes honeyed nuances, with a deep, expansive aftertaste of coffee, liquorice and carob.
A Mariasole is a rare gem, released in a strictly numbered edition of just 665 bottles. The grapes are harvested by hand in the second half of September.
Winemaking
After six months of drying on trays, the grapes rest for 10 years in 54-litre glass demijohns. They are then crushed and destemmed, followed by 30 days of maceration on the skins with daily pump-overs and slow fermentation at 15-20 °C. The wine is racked and returned to demijohns, a process that preserves its aromatic freshness, enhances drinkability, and produces a more enveloping sweetness. The process concludes with six months of bottle ageing.
Perfect pairings
Ideal with classic chocolate desserts, but also suited to more adventurous pairings such as oysters or caviar for a truly unique tasting experience.
