What does IGT wine mean?
The IGT designation (Indicazione Geografica Tipica) identifies wines that come from a specific geographical area and follow defined production standards, while allowing greater flexibility than more strictly regulated categories such as DOC and DOCG.
This freedom gives producers the opportunity to interpret the territory in a more personal way, highlighting the vintage, the fruit and the natural character of the grapes.
IGT wines can be red, white, rosé, sparkling or passito, offering a broad and dynamic range of styles. For this reason, they are an especially appealing category for those who wish to discover authentic, approachable expressions of Valpolicella.

Traditional IGT wines
Italian sparkling rosé wine
E...lisa
Alcohol content: 12,00% Vol

Description
E…lisa is a sparkling rosé distinguished by its elegant salmon-pink hue and a fine, persistent mousse.
On the nose, it reveals enticing aromas of redcurrant, wild strawberry and pink rose petals, complemented by subtle saline, iodine-like notes. The palate opens with vibrant tension, freshness and pronounced savoury character, delicately lifted by fine bubbles. This gives way to a softer, more gentle fruity trail that accompanies the finish. A wine with a character that is both tender and resolute, mirroring the personality of our mother Elisa, to whom this wine is dedicated.
The grapes are harvested by hand in the first half of October.
Winemaking
Following roller crushing and destemming, the must is racked after 12 hours of cold maceration on the skins. This is followed by white vinification and secondary fermentation using the Charmat method at 15 °C for 20 days.
Perfect pairings
E…lisa is ideal as an aperitif, paired with vegetable-based dishes, cured meats and lightly aged cheeses. We especially enjoy it with stuffed cherry tomatoes and small bread and courgette fritters, still prepared according to our mother’s original recipe.
Veronese IGT white wine
Bianco Veronese

Description
Bright straw yellow in colour, Bianco Veronese opens with juicy aromas of ripe white peach and citrus fruit, enhanced by spicy hints of white pepper. These notes are beautifully interwoven with nuances of aromatic herbs and wet stone, creating a fresh and expressive bouquet. On the palate it is smooth and refreshing, leading to a clean, savoury finish where the fruity and citrus notes linger pleasantly.
The grapes are harvested by hand in the first half of October.
Winemaking
After roller crushing and destemming, fermentation takes place at controlled temperatures between 15 °C and 17 °C. The wine then matures in stainless steel tanks, preserving its freshness and aromatic purity.
Perfect pairings
Thanks to its vibrant acidity, this wine pairs particularly well with rich or fatty dishes, such as baccalà alla vicentina or soft cheeses. For a more unconventional pairing, we recommend enjoying it with sushi.
Dried-grape IGT wines
Dry red wine
Massimino
Alcohol content: 15,00% Vol

Description
Massimino is produced from grapes that undergo a short period of drying, a technique that gives the wine a rounded, velvety character.
Deep, dense ruby red in colour with garnet highlights, it opens on the nose with enticing sweet aromas of raspberry, redcurrant and wild strawberry, layered with subtle vanilla notes and delicate hints of red rose. On the palate, Massimino shows remarkable structure and balance: the warmth of the alcohol is perfectly offset by freshness, savoury notes and well-defined tannins, which carry the wine smoothly through to a long, elegant finish marked by delicious flavours of jammy fruit. The grapes are harvested by hand in the second week of September.
This red wine is dedicated to our father, Massimino, a man of strong will and determination who, beneath his decisive manner, possessed a great kindness of spirit and an ever-gentle, benevolent gaze.
Winemaking
The selected grape bunches are dried on trays until November. They are then crushed and destemmed, followed by maceration on the skins for twenty days, with daily pump-overs. Fermentation takes place at temperatures between 10 °C and 20 °C. After racking, the wine is transferred to wood, where it matures for 24 months, partly in oak casks and partly in tonneaux. Following bottling, it is refined in bottle for a further six months.
Perfect pairings
Ideal with a mixed grilled meat platter. For those looking for something more adventurous, it is also excellent with spicy dishes such as meat goulash or a richly spiced vegetable soup.
White passito wine
Il Castelliere

Description
Il Castelliere is a beautifully golden wine with luminous amber highlights. On the nose it enchants with aromas of vanilla pod, dried apricot, candied orange peel and almond. The palate is intense, savoury and richly flavoured, offering a sweet, luscious texture reminiscent of peaches in syrup, followed by a pleasing finish of toasted almond.
Garganega, the white grape variety used to produce this wine, has long been traditionally grown in Valpolicella, albeit in small quantities among the long rows of red varieties. We began producing this wine in the 1990s, almost as an experiment, and have never stopped since.
Winemaking
The selected grape bunches are dried on trays until February, resulting in a weight loss of around 50%. After pressing the grapes whole, without destemming, the must macerates on the skins for 10 days. It is then transferred to French oak, where fermentation proceeds slowly and maturation in barrel continues for 12 months. Following bottling, the wine is refined in bottles for a further six months.
Perfect pairings
An eclectic wine that pairs elegantly with a wide range of desserts, such as shortcrust pastries, crème brûlée or millefeuille. It is also excellent alongside blue cheeses with a bold, spicy and long-lasting flavour.
