Traditional dried-grape wines
How a traditional dried-grape wine is made
A traditional dried-grape wine is born from a precise choice: allowing time to transform the grapes. After harvest, the clusters are left to dry slowly, a process in which water content decreases while aromas, sugars and extractive compounds concentrate.
This drying method gives Venturini wines an intense and complex profile, capable of expressing the Valpolicella region in depth.
In our Valpolicella winery, this style takes shape through three different interpretations of dried-grape wines. Amarone, dry and bold, is for those seeking a substantial wine with deep character, ideal for contemplation or pairing with rich dishes.
Recioto, sweet and velvety, retains some natural sugars and pairs perfectly with desserts or strongly flavoured cheeses. Finally, IGT wines complete the range with fruit-forward labels, ideal for pairing with fish, pasta, starters, or for those seeking an everyday glass without losing the character of the territory.

Dried-grape wines from Venturini
Among the finest traditional dried-grape wines, Valpolicella labels hold a special place thanks to the unique relationship between territory and technique. Amarone, Recioto and IGT wines are symbols of an ancient know-how: the ability to transform the harvest into wines that deliver depth, longevity and extraordinary complexity. The result is an intense, layered wine that evolves in the glass.
Venturini’s production presents three interpretations of the drying method: Amarone, dry and enveloping, the benchmark for Veneto dried-grape wines; Recioto, the sweet and velvety version, perfect on its own or paired with chocolate desserts and blue cheeses; IGT wines complete the range with approachable, fruit-driven styles, ideal for those seeking a more immediate yet recognisable experience.
These wines are not just products of excellence: they are the expression of a territory where grape drying is a defining feature. Tasting them means entering the heart of Valpolicella and discovering the time, care and attention contained in every glass.
Amarone
Amarone is the most famous dried-grape wine of Valpolicella, made from slowly dried grapes. This method produces an intense and complex wine, characterised by significant structure, softness and aromatic richness that develops over time. Though dry, it retains the opulence typical of dried grapes, with notes of ripe fruit, spices and balsamic hints. Amarone is ideal with structured dishes, substantial meats, or for contemplative enjoyment, allowing the glass to reveal all its nuances.
Recioto
Recioto is the sweet version of Valpolicella dried-grape wines. During fermentation, part of the natural sugars remains unconverted to alcohol, preserving elegant and balanced sweetness. It is the typical dried-grape wine to pair with desserts, especially chocolate, but also with blue or aged cheeses. Velvety and complex, it combines aromatic intensity with drinkability, representing one of the most refined and traditional expressions of the region.
IGT
IGT wines are designed for those seeking freshness, drinkability and a fruit-forward profile, ideal with everyday dishes such as starters, light pasta or fish courses. Compared to the great dried-grape wines, they offer a more approachable and direct glass, perfect for those wishing to experience the territory simply, without compromising artisanal care or the identity of Valpolicella.
